Potato Mash:
- 2 Yukon Gold Potatoes
- Half & half (1/2 cup)
- Butter (1 tablespoon)
Soffritto
- Onion (1/3 cup)
- Carrot (1/3 cup)
- Green Bell Pepper (1/3 cup)
- Ground Beef (1/3 cup)
- Red Wine (1/4 cup)
- Beef Broth (1/2 cup)
- Thyme and/or Bay leaf *Optional*
Herb Sauce
- Basil (10 leaves)
- Mint (10 leaves)
- Red Wine Vinegar (2 teaspoons)
- Olive Oil (2 tablespoons)
- Salt (1 teaspoon)
- Garlic Power (1 teaspoon)
Recipe
1) Kick things off with our fluffy mashed potatoes! Wrap them snugly in foil and let them roast to golden perfection for 1 hour at 400°F.
2) While the potatoes work their magic, master your knife skills by finely dicing onion, carrot, and green pepper into uniform 0.5cm cubes.
3) Heat a splash of olive oil in a pan over medium-low heat, and sauté those vibrant veggies for 10 minutes, unlocking their full flavor.
4) Once veggies are done, take them out and crank up the heat to medium-high. Flash-fry the ground beef until it loses its pink hue, about 3-4 minutes.
5) Set the beef aside and dial down the heat to medium. Pour in the wine, stir to release the fond from the pan’s bottom, and let it bubble away for 2 minutes.
6) Introduce the beef broth and optional herbs, letting it simmer for 4-5 minutes. To check its readiness, coat the back of a spoon; if a swipe leaves it clean, your sauce is spot-on.
7) Reunite the beef and veggies with the sauce in the pan, give it a good stir, and season to taste with salt and pepper. Keep the soffritto warm over low heat while we move on.
8) Time to whip up our herb sauce! Toss basil, mint, red wine vinegar, salt, garlic powder and olive oil into a food processor or blender, blitz until velvety smooth.
